Cheese soufflé toast with cherry tomatoes

Ingredients:
  • 5 slices of thick sliced white bread
  • 20g butter
  • 500g grated strong cheddar
  • 4 eggs whisked
  • 300ml double cream
  • 2 pinches cayenne pepper
  • Salt and pepper
  • 1 vine cherry tomatoes
  • 23cm square tin

Preheat oven 190˚C

Butter the base of your tin. Remove the crust of the bread and cut to completely cover the base of the tin with the bread. Season the bread base with salt, pepper and cayenne. Evenly spread the cheese over the bread base. Whisk the cream into the eggs and season. Pour the cream and eggs on the cheese making sure it goes right to the edge of the tin

Bake the cheesy toast for 15 minutes, it may need longer in the oven and should feel reasonable firm and be golden brown, it will rise in the oven. When cooked let it rest and cut into 3cm squares, serve dusted with cayenne and the cherry tomato vine.
