Wild garlic salsa verde to serve with English lamb

Ingredients:
  • 200g wild garlic, washed
  • 1 tbsp Dijon mustard
  • 1 tbsp capers, drained
  • 2 anchovy fillets, chopped
  • 1 tsp white wine vinegar
  • 150 ml olive oil
  • Salt & pepper to taste

Blanch the wild garlic in boiling salted water until wilted, drain and when cool, squeeze to remove the excess water.

Put the wild garlic into a food processor with the mustard, capers, anchovy fillets, vinegar and olive oil and blitz briefly, it needs to be a rough puree.

Add salt and pepper to taste.

Note:

This salsa verde would also go well with any white fish.
