Autumn Fruit Crumble
Serves 6
- 4 red plums (cut into 8 slices)
- 2 pears (peeled and cut into 8 slices)
- 2 apples (peeled and cut into 8 slices)
- 100g blackberries
- 50g Demerara sugar
- 3 tbsp cranberry juice or water
- ½ cinnamon stick
- 1 vanilla pod
Crumble topping
- 100g plain flour
- 50g soft brown sugar
- 50g butter (cut into small pieces)
- 40g porridge oats
- 20g flaked almonds
- 30g flaked almonds
Pre-heat oven to 170°C.
Make the crumble topping first. Mix the flour and butter in a food processor until the mixture resembles breadcrumbs. Add the sugar and blend for a few seconds till combined. Place mixture in a bowl and add the oats, almonds and hazelnuts and mix. Spread it out on a baking tray and baking for 30 minutes, taking out and stirring every 10 minutes. It is ready when the almonds are toasted and light brown.
Put the plums, pears, apples, vanilla pod & cinnamon stick in a baking dish and sprinkle the sugar and cranberry juice over. Bake for 20 minutes, stir and add the blackberries and bake for another 10 minutes, or until cooked.
The fruit & crumble topping can be prepared to this stage and reheated when needed. To serve, place the re-heated fruit on each plate and sprinkle the warmed crumble over. Serve with creme fraiche.
The crumble mixture is also delicious when served over Greek yoghurt.
