Brown sugar Meringues
Makes 60
- 3 Egg whites
- 170g Dark brown soft sugar
Preheat the oven to 110°C.
Whisk the egg whites until stiff. Add a dessertspoon of sugar whisk in and keep whisking adding the sugar spoonful at a time until it has all been combined.
Pipe on to a lined baking tray and bake in the oven for 40-45 minutes until dried out turn off the oven and allow to cool in the oven.
Raspberry Meringues
Makes 60
- 3 Egg whites
- 170g Caster sugar
- 50g Freeze-dried raspberries crushed and passed through a seive
Preheat the oven to 110°C.
Whisk the egg whites until stiff. Add a dessertspoon of sugar whisk in and keep whisking adding the sugar spoonful at a time until it has all been combined. Stir through about 2 tbsps of sieved raspberries.
Pipe on to a lined baking tray and scatter with the remaining crushed raspberries and bake in the oven for 40-45 minutes until dried out turn off the oven and allow to cool in the oven.
